Rice paper rolls are a staple in my house – so quick and easy and so yummy!

 

Throw in whatever veggies you have in the fridge ! Some of my fave ingredients include
– crispy tofu
– edamame noodles ( good for extra protein )
– carrot
– capsicum
– cucumber
– broccoli sprouts
– avocado
– mixed leaves

 

For the homemade satay
– 2 tbsp peanut butter
– 2 tbsp tamari
– 2 tbsp olive oil
– 1 tsp honey
– salt / pepper / chilli
